职位描述
1、招聘岗位:行政(副)总厨
2、岗位职责:
(1)负责制定南航餐食产品研发发展战略和工作目标,建立健全南联航食系统产品研发管理制度体系,负责统筹航食系统各单位的餐食研发工作,牵头与外部餐食研发资源合作,引进新技术、新产品。
(2)负责统筹国内外航客户和国际外航客户选改餐、要客航班保障、重要活动餐食保障等工作安排。
(3)负责南航国内外配餐供应商的选改餐工作,为配餐供应商及餐饮团队提供实际的技术支持。
(4)负责主持研发中心餐食研发工作,组织团队研发创新餐食,完成中英文餐谱的设计及制订,落实公司在餐食研发方面的年度工作目标。
(5)负责建立健全航食系统产品品质监管和检查制度,负责对餐食出品质量进行把关,对餐食卫生安全及餐食出品是否符合公司标准承担相关责任。
(6)负责建立健全航食系统厨师团队培训和人才考核选拔体系,负责对厨师团队进行管理、技术指导和培养。负责生产车间现场餐食制作、装配的指导工作。
(7)负责产品生产和研发的培训工作,负责乘务长机上餐食服务的培训工作。
(8)根据工作需要,在公司同意下可引进技术团队。
(10)负责上级交办的其他事项。
3、任职资质:
(1)具有国际或国内承认的厨师资格证书,或拥有烹饪技术、食品服务技术等相关领域的学位。
(2)具有3年以上国际航空配餐企业行政总厨或厨师团队领导经验者,具有知名新品研发厨房领导工作经验。
(3)具有米其林星级餐厅工作经验或知名酒店总厨工作经验者优先。
(4)具有国际知名餐饮新品研发厨房领导工作经验、航空公司中央厨房领导工作经验或航空公司新品餐食研发工作领导经验者优先。
(5)曾担任Skytrax全球排名前十名五星级航司行政总厨(副总厨)服务经验者优先。
(6)熟悉中餐、西餐、清真餐、日本餐、韩国餐、东南亚餐等多种餐食产品生产。
(7)具备独立撰写餐食研发方案和各种餐谱配方并能设计制定原材料标准和制作工艺的专业能力。
(8)熟练操作Microsoft Office等办公软件,普通话标准,熟练的英文听说读写能力。

2.Job responsibilities:
(1) Responsible for formulating the development strategy and work objectives of China Southern Airline catering products. Establishing and improving the catering R&D management system for Nanland. Responsible for coordinating the menu development of all catering units. Leading cooperation with external catering development resources, and introducing new technologies and products..
(2) Responsible for coordinating meal presentation for domestic and international airline customers, ensuring meal services for VIP flights, and arranging meal services for important events.
(3) Responsible for coordinating the meal presentation for domestic and foreign airline customers, by providing strong technical support to catering suppliers and teams.
(4)Responsible for leading the meal research and development work of the R&D center, organizing the team to innovate and develop new meals, designing and formulating menus in both Chinese and English, and implementing the company's annual goals in meal research and development.
(5)Responsible for establishing a sound product quality supervision and inspection system ensuring meal quality compliance to company's standards, and assuming responsibility for the food safety.
(6)Responsible for establishing and improving the training and skills assessment and selection system of the chef team , Manage and provide chef team with professional technical knowledge and skill training.Supervising and02coordinating02on-site meal production and assembly .
(7)Responsible for product production and Menu develop training, responsible for the flight attendant's in-flight meal service training.
(8)According to job requirements, with the company's approval, introducing Technical teams can be considered as a supplement.
(9)Responsible for other matters assigned by superiors.
3.Qualifications
(1)Obtain an internationally or nationally recognized chef qualification, or a degree in a culinary-related field such as culinary technology, catering service technology, etc.
(2)Must have at least three years02of experience in international air catering companies or in a professional kitchen as a leading position. Having leading experience in well-known menu development and R&D kitchens.
(3)Working experience in a Michelin-starred restaurant or a chef at a well-known hotel is preferred.
(4)Experience in leading internationally renowned menu development and R&D kitchens, leadership experience in airline central kitchen ,or new catering products development and R&D for airlines is preferred.
(5)Experience in serving Skytrax's top 10 five-star airlines as Executive Chefs (Sous Chefs) is a plus.
(6)Acquainted skills in cooking cuisines of Chinese, Western, Halal, Japanese, Korean, and Southeast Asian.
(7)Have the professional ability to independently write meal R&D plans and various meal recipes, and can design and formulate raw material standards and production processes.
(8)Proficiency in office software such as Microsoft Office, Mandarin , proficient English listening, speaking, reading and writing skills.
