东来顺食府

东来顺的创始人是一位名叫丁德山的回民。1903年，他在东安市场摆摊售卖羊肉杂面和荞麦面切糕，后来又增加了贴饼子和粥。由于生意日益兴隆，便取“来自京东，一切顺利”之意，正式挂起东来顺粥摊的招牌。1914年，又增添了爆、烤、涮羊肉和炒菜，并更名为东来顺羊肉馆。他通过高薪聘请前门外正阳楼饭庄的一位名厨传授技艺，使东来顺的羊肉刀工精细，切好的肉片放在青花瓷盘中，盘上的花纹透过肉片隐约可见。到三四十年代，东来顺的涮羊肉已闻名京城，据三十年代的一些账面记录，每年肉旺季销售的羊肉超过五万公斤。
