Over the past 15 years, despite setbacks, the company has steadily grown. Today, it operates international brands such as Bar Rouge, Mr & Mrs. Bund, Ultraviolet, Pu Ben, and The Cut. Looking ahead, VOL GROUP aims to expand its footprint across China, Asia, and the globe, establishing a globally recognized dining group rooted in Chinese culture.
**Mr&Mrs Bund Modern Eatery By Paul Pairet**
Launched in April 2009, Mr&Mrs Bund is a modern French restaurant offering a casual yet elegant atmosphere in the historic Bund location. The restaurant reflects the chef Paul Pairet's global influences, blending contemporary flair with timeless charm. The menu features classic French dishes reimagined by Pairet, complemented by family-style service and a refined ambiance. The extensive wine list and hearty portions make dining here reminiscent of a warm Sunday dinner at home.
**Bar Rouge**
Opened in November 2004 on the rooftop of Bund 18, Bar Rouge marked a new era in Shanghai’s nightlife. As one of the city’s premier fashion and entertainment destinations, it quickly became a hotspot. Featuring renowned French mixologists, striking interior design, and Shanghai’s top DJs, Bar Rouge offers an unforgettable night out. Its vibrant atmosphere, complete with party music, stylish cocktails, and lively crowds, makes it the heart of Shanghai’s nightlife. Bar Rouge Singapore, opened in 2017 on the 71st floor of Swissotel The Stamford, offers breathtaking views of Marina Bay, providing a true club experience in the bustling city.
**UltraViolet By Paul Pairet**
After over 15 years of planning, chef Paul Pairet’s groundbreaking UltraViolet restaurant made its debut in 2012 under the support of VOL GROUP. This restaurant is the world’s first multisensory dining experience, combining gourmet cuisine with cutting-edge technology to immerse guests fully in their meal.
With just ten seats at a single table, UltraViolet serves a "forward-thinking" 20-course tasting menu. Each dish is paired with a custom-designed sensory environment, incorporating lighting, sound, music, scents, and more. The immersive visual projections, imagery, and imagination, alongside the exquisite food, create an unforgettable journey. UltraViolet opened on May 18, 2012, in a secret location in Shanghai.
**The Cut Steak & Fries**
Opened in April 2014 on the 6th floor of IAPM Mall, The Cut specializes in steak, offering luxurious yet affordable dining. The restaurant’s design combines sharp-edged modernity with urban chic and rural charm, featuring a rare salad bar in Shanghai with over 20 daily fresh vegetables. The rooftop terrace at The Cut Rooftop overlooks Jing’an District’s skyline, providing a serene escape from the city’s hustle. In addition to premium steaks and grilled meats, it offers live music, DJs, and craft cocktails for a relaxing after-work experience. The Cut expanded to Beijing in 2018 with a branch in Sanlitun, sharing Shanghai’s diverse Western dining offerings with the capital.
**Pu Ben**
Situated along the Bund Wharf, Pu Ben allows diners to savor creative cuisine while enjoying the scenic view of the Huangpu River. Inspired by Zhuangzi’s philosophy of simplicity and natural beauty, Pu Ben embraces the essence of minimalism in culinary art. Even the most memorable flavors often stem from simplicity and authenticity, requiring no elaborate techniques or rare ingredients.
Named after its philosophy, "Pu" represents unpolished jade and raw, pure ingredients, symbolizing elegance and uniqueness, while "Ben" refers to Chef Jason Liang’s cherished recipe book, chronicling his culinary inspirations collected over three decades across China. Combining craftsmanship with tradition, Pu Ben seeks to reconnect diners with the purity of taste.
